
Angel Mendez
Executive Chef
Originally from Sacramento, California, Chef Angel Mendez grew up in Indianapolis after his family opened a grocery store on the city’s south side. Inspired by his mother’s cooking and the way food brought people together, he began working in restaurants at 16 and later studied culinary arts at Central Nine Career Center and Ivy Tech, where he earned his Culinarian Certificate. His early experience—starting as a dishwasher and prep cook before moving into line positions—instilled in him a deep respect for fundamentals and the discipline of the craft.
Angel went on to become a sous chef at local favorite Delicia, where he gained valuable mentorship and the opportunity to develop his own creations. At Provision, he continues to craft dishes inspired by seasonal ingredients, culinary literature, and conversations with his twin brother, who is also a chef. For Angel, food is about more than taste—it’s about creating moments of joy and connection for each guest.
Outside the kitchen, he enjoys spending time with loved ones, exploring Indiana’s parks and trails, and traveling to discover new places—and the stories told through their food.
